I bought some nice peaches over the weekend with Peach Cobbler in mind.  I knew there was a real simple recipe but the ones in my cook books and on the Internet were a little complicated and called in some cases for canned peaches and the syrup. 

One call to Linda and she shoots me an email with a recipe that can be done is something like three easy steps with just about as few ingredients.  Cook at 350 degrees for 45 minutes.

Right after I put it in the oven, Tony Rome called and wanted us to return a measuring tape we had borrowed about a week ago, so we were very late getting it back... maybe we even had it for two weeks.

Well, I left to return that and forgot about the time on my cobbler.  The peaches and the dough in the middle were quite tasty but after 1.5 hours the bottom became like the soles of any work-boot.

Its my fault ... or I can blame Tony, but Linda’s recipe was not the culprit... I simply made charcoal of the bottom of my cobbler.

Thanks anyway, Linda - you are a sweetheart.

Jim, NEVER leave home when baking. I can't stop laughing over this one.

Cobblers

3 cups of fruit...add 3/4 c. of sugar if using fresh fruit and set it aside while preparing batter...no need to add more sugar if using canned fruit that is sweetened and has syrup.
Melt 1 stick of butter in a 2 qt. or 8 by 8 baking dish in a 350 d. oven
Mix 3/4 c. of flour with 3/4 c of milk...and 1 c of sugar if fresh fruit is being used...1/2 cup sugar if canned fruit.Pour your flour,milk and sugar batter over the melted butter and then pour your fruit into the middle of the mix.DO NOT STIR...bake at 350 for 45 mins.

The ¨bake 45 minutes¨ might be the most important issue.  If you leave it twice as long you get hot peaches in a coconut shell.

YUMMMM. Thanks so much! Fresh Texas Peaches will be here soon.  Much easier than what I do now.

And Jim..... I will remember 45 min. set timer, and DONT LEAVE THE HOUSE! Or drink to much Sol and have music so loud I can't hear the timer!
Now if I can just find some good airfair I will order one one Linda's Cake and eat that too! Wait..... gotta remember the wetsuit. Cool

Giving this a whole new effort today.  I have the right size pan and it fits into my electric counter-top oven so I can control temperature and time exactly.  This can´t miss.

Don´t call me today, Tony - I´m not going anywhere - well, maybe to get some vanilla ice cream for this treat.
